Frankly all of Soldier's hats are so damn awesome. I love that they tend to have the warrior theme going on, it make for some real good hats.
Pyro
1st: Brigade Helm (Got it, YAY!) My absolute favorite hat in the game! Maybe it's Pyro's connection with fire and being in fiery areas, or maybe it's just because it looks so cool.
2nd: Stockbroker's Scarf Technically not a hat, but I'm counting it as one because it is obtained in the same manner. The only reason I'm counting this above the Sombrero is because it is currently the only thing that can make my Pyro as cool as ever.
3rd: Old Guadalajara I had it once, but traded it for the brigade helm. This is definitely one of Pyro's cooler hats, on top of being characteristically funny and silly for Pyro's hats. Maybe it's also got something to do with how the Mexicans like to cook things hot and spicy (just like Pyro, hehe).
Demoman
1st: Glengarry Bonnet (Got it. Yay!) One of my favorites in the whole game, awesome Scottishness.
2nd: Dangeresque, too? (Got it. Yay!)

Weapons I Want to see in Game
I have to say, while browsing through Polycount forums I was very surprised by the quality of the weapons being displayed here are a few that stand out to me.
That chainsaw is needed badly.
This one in particular stood out to me. Somehow I love the incongruity of this weapon considering it was made for Pyro. [16] [17]
My Favorite Polycount Packs that did not make it (but I would love to see in-game)
[18] WAR! reparations? Awesome. I love the cannon idea and I love that medal.
[19] A fitting rival for the Saharan Spy. That scimitar man.
[20] I really like the idea of Spy slitting throats rather than stabbing backs, plus I love the homburg.
